- 4 cups semi sweet chocolate chips
- 4 cups white chocolate chips
- 2 Cans sweetened condensed milk
- 4 TBSP butter
- 2 TBSP corn syrup
- 1 cup Cadbury Mini Eggs
Instructions
- Start off by crushing the mini eggs using a sandwich bag and rolling pin. They don’t have to be a fine powder as you want to be able to feel and taste the texture of the eggs. Instead you want aim for sizeable chunks, halves and quarters.
- In one microwave safe bowl, put in the semi sweet chocolate chips with a can of sweetened condensed milk and 2 TBSP of butter.
- In the other bowl, put in the white chocolate chips with a can of sweetened condensed milk and 2 TBSP of butter.
- Next, melt the white chocolate chip mixture first as this will take longer to set whilst the other is melting. Heat the mixture in the microwave on high power for 40 second intervals until it has all melted, making sure you stir each time you check on it. Note: the mixture will turn into a thick fudge like consistency.
- Do the same for the semi sweet chocolate chips mixture.
- Once both of the separate fudge mixtures have formed, stir in 1 TBSP of corn syrup to each.
- Now you can decide whether you want to add the mini eggs in with the fudge mixtures at this stage, or as you layer the semi sweet and white chocolate together.
- Take your lined baking tray and scoop out a bit of the semi sweet chocolate fudge mixture. Press it in.
- Alternate with the white chocolate fudge mixture while sprinkling in the mini eggs. Remember to leave some of the crushed mini eggs so you can sprinkle on top.
- Now you should have created a marbled swirled fudge slab. Use the spatula to marble the two chocolate fudges together.
- Sprinkle on the remaining mini eggs and use the spatula to press them in.
- Let the fudge cool completely and then you can set it up further in the refrigerator.
- Set in the refrigerator for 2-3 hours.
- Cut on a chopping board with a sharp knife and serve. This should yield 81 pieces of fudge.
- Store your fudge in an airtight container for up to 3 weeks in the refrigerator. Take out 20 minutes prior to serving for maximum pleasure in every bite.
