Instructions

  • Start off by preparing the powdered sugar by sifting it through the fine mesh sieve in a bowl to remove and discard any lumps in order to end up with a smooth fudge consistency.
  • In the large saucepan put in the white chocolate chips, sweetened condensed milk, a few drops of vanilla extract and butter.
  • Place the saucepan onto a medium low heat on the stove.
  • Stir this mixture occasionally, until the white chocolate chips start to melt.
  • Once all of the ingredients have completely melted, you will start to see the fudge mixture thicken and slide off your spatula without sticking.

  • Stir in the powdered sugar, making sure it has dissolved in the fudge mixture evenly.
  • Now you can add the optional colourings (think pink, red or your partner’s favorite color) into the white fudge. Caution: using an excessive amount of food coloring may leave a bitter taste and stain clothing/surfaces.
  • When the fudge mixture has turned the desired color, you can add the optional flavourings.
  • Pour the fudge mixture into the prepared pan or silicone mold. Smooth and press the mixture into the baking tray/mold evenly with the spatula.

How to temper chocolate using a microwave without a candy thermometer:

  • Melt 3/4 of the chocolate chips partially (on half power) in bursts of 30 seconds making sure it has not burnt, leaving 1/4 left over as you’ll need this later.
  • When the chocolate still has a few lumps in the molten liquid, stop right there.
  • Stir the the chocolate liquid and add the a tsp of chocolate chips at a time. This is known as the “seeding” stage.
  • When the chocolate looks like it won’t be able to melt any more of the chocolate, you know that it is ready.
  • If you want to color the white chocolate now is the time to mix in your coloring.
  • Pour the chocolate liquid into the piping bag and cut the tip off. Practice on a plate and cut more off from the tip for a larger “font” size.

Top tip: If the fudge is fridge cold and you’ve written the message wrong you can break the chocolate away and start over once it has set (setting happenings within a few seconds). After all, you don’t want to be writing “Happy Valentine’s Day Molly” when you’re actually giving it to “Mollie”.
