What is Valentine’s Day?

Valentine’s Day honors and celebrates the legend of Saint Valentine who, after Emperor Claudius banned marriage ceremonies, would bless and perform marriages in secret for young men who were in love. Having been thrown in prison for his betrayal of the rules, Saint Valentine fell in love with the jail keepers daughter and on his day of execution (February 14th) sent a final love letter which he signed ‘from your Valentine’.

Today, Valentine’s Day has become a commercial celebration of love and romance all across the world, as couples express their romantic feelings for one another by exchanging gifts, flowers and of course candy.

How to pipe a chocolate message

What you’ll need:

Optional:

How to temper chocolate using a microwave without a candy thermometer:

  • Melt 3/4 of the chocolate chips partially (on half power) in bursts of 30 seconds making sure it has not burnt, leaving 1/4 left over as you’ll need this later.
  • When the chocolate still has a few lumps in the molten liquid, stop right there.
  • Stir the the chocolate liquid and add the a tsp of chocolate chips at a time. This is known as the “seeding” stage.
  • When the chocolate looks like it won’t be able to melt any more of the chocolate, you know that it is ready.
  • If you want to color the white chocolate now is the time to mix in your coloring.
  • Pour the chocolate liquid into the piping bag and cut the tip off. Practice on a plate and cut more off from the tip for a larger “font” size.

Top tip: If the fudge is fridge cold and you’ve written the message wrong you can break the chocolate away and start over once it has set (setting happenings within a few seconds). After all, you don’t want to be writing “Happy Valentine’s Day Molly” when you’re actually giving it to “Mollie”.

How far in advance can you make chocolate fudge?

You can make and store chocolate fudge 2 weeks in advance (as long as you keep it in an airtight container, refrigerated) without the addition of fresh fruit. If you’ve added dried ingredients to the chocolate fudge you can keep to the 2 weeks. However, we recommend you serve the milk chocolate strawberry fudge the day after or, ideally, the day of making it.

How can I wrap Valentine’s Day fudge?

When it comes to wrapping Valentine’s Day gifts, some prefer to go simple; others more extravagant. These chocolate fudge variations will need refrigeration soon after they have been made and gifted so why not leave a note for your special someone.

You can use cellophane to wrap the fudge and then pop it in into a gift box or airtight container ready for them to refrigerate.

Another option is to use parchment paper and secure with a tight ribbon. Think red or pink ribbon for Valentine’s Day.

Whether it is Valentine’s Day fudge or not, always make sure that you wrap it up tightly!

How do I store chocolate fudge?

You should store chocolate fudge in the fridge in an airtight container to prevent it from melting. For more traditional fudge recipes you can store them at room temperature in an airtight container for up to 3 weeks before it starts to go stale.

FAQs

What is the secret to making fudge?

The secret to making fudge is boiling the fudge to the right temperature – 234 and 237 °F/ 112 and 114 °C. Then cool it to 109 to 113 °F/ 43 to 45 °C and beat until it loses its shine. If these temperatures are not reached or the fudge is overcooked, the fudge will simply not set or become rock solid.

How do professionals make fudge?

Professionals make fudge in large copper pots called copper kettles. They will boil the contents of sugar, butter and milk to the correct temperatures and cooled to be beaten.

Why is my fudge not hardening?

Your fudge is not hardening because you didn’t boil it to the correct temperature (234 and 237 °F/ 112 and 114 °C) or there might have been an error when measuring your ingredients. Incorrect temperatures and in-proportionate ingredients will lead to your fudge not setting.
